CSA Recipes - August 12, 2026
1. Thai Basil Potato & Pepper Hash
Ingredients: Potatoes (Huckleberry Gold), Shishito Peppers, Poblano Peppers, Shallots, Thai Basil
Dice potatoes and sauté in olive oil until golden and tender.
Add sliced shallots, shishito peppers, and poblano peppers.
Cook until the peppers soften and begin to char.
Season with salt and pepper.
Finish with chopped Thai basil and serve warm.
2. Roasted Tomato & Poblano Salsa
Ingredients: Roma Tomatoes (Sunrise Sauce), Greenhouse Slicer Tomatoes, Poblano Peppers, White Onion, Thai Basil
Cut tomatoes, poblanos, and onion into large pieces.
Roast at 425°F for 20–25 minutes until lightly charred.
Let cool slightly, then chop everything together.
Stir in chopped Thai basil, olive oil, salt, and pepper.
Serve with chips, tacos, grilled vegetables, or roasted potatoes.
3. Summer Crisp Lettuce & Tomato Salad
Ingredients: Summer Crisp Lettuce (Gordini), Roma Tomatoes, Greenhouse Slicer Tomatoes, Shallots, Thai Basil
Tear lettuce into bite-sized pieces.
Slice both types of tomatoes.
Thinly slice shallots and tear or chop Thai basil.
Toss everything with olive oil, balsamic vinegar, salt, and pepper.
Serve immediately while the lettuce is crisp.
4. Shishito & Poblano Pepper Potato Tacos
Ingredients: Potatoes (Huckleberry Gold), Shishito Peppers, Poblano Peppers, White Onion, Summer Crisp Lettuce
Dice potatoes and roast at 425°F for 25–30 minutes.
Sauté sliced poblanos, shishitos, and onion until lightly charred.
Add the roasted potatoes and season with cumin, salt, and pepper.
Spoon into tortillas and top with shredded lettuce.
Add salsa or lime juice if desired.
5. Warm Tomato, Pepper & Potato Skillet
Ingredients: Potatoes (Huckleberry Gold), Greenhouse Slicer Tomatoes, Roma Tomatoes, Poblano Peppers, Shallots, Thai Basil
Dice potatoes and cook in olive oil until golden and tender.
Add sliced shallots and poblano peppers; cook until softened.
Add chopped tomatoes and simmer for 5–7 minutes.
Season with salt and pepper.
Finish with fresh Thai basil and serve with crusty bread.
