1. Crispy Potato & Okra Hash
Ingredients: Yellow Potatoes (Lehigh), Okra Mix (Carmine Splendor/Jambalaya), Bell Pepper Mix, Red Onion (Cabernet)
Dice potatoes and cook in olive oil over medium-high heat until browned and nearly tender.
Add sliced okra, peppers, and red onion.
Cook until the vegetables are browned and tender.
Season with salt, pepper, and smoked paprika.
Serve as a breakfast hash or easy side dish.
2. Heirloom Tomato & Pepper Panzanella
Ingredients: Summer Crisp Lettuce (Gordini), Roma Tomatoes (Midnight Roma), Heirloom Slicer Tomatoes, Bell Pepper Mix, Red Onion
Cut tomatoes and peppers into bite-sized pieces.
Add thinly sliced red onion and torn lettuce.
Toss with toasted bread cubes.
Dress with olive oil, red wine vinegar, salt, and pepper.
Let sit for 10 minutes so the bread absorbs the tomato juices.
3. Charred Okra & Tomato Skillet
Ingredients: Okra Mix, Roma Tomatoes (Midnight Roma), Bell Pepper Mix, Red Onion
Slice okra and peppers and thinly slice the onion.
Cook okra in a hot skillet with a little oil until browned.
Add peppers and onion and cook until tender.
Stir in chopped tomatoes and simmer for 3–5 minutes.
Season with salt, pepper, and a pinch of Cajun seasoning.
4. Roasted Potato & Tomato Lettuce Salad
Ingredients: Yellow Potatoes (Lehigh), Summer Crisp Lettuce (Gordini), Roma Tomatoes, Red Onion, Bell Pepper Mix
Cut potatoes into small cubes and roast at 425°F for 25–30 minutes.
Chop lettuce and tomatoes and thinly slice the onion and peppers.
Let potatoes cool slightly, then add to the vegetables.
Toss with olive oil, lemon juice, salt, and pepper.
Serve warm or at room temperature.
5. Easy Summer Tomato & Okra Stew
Ingredients: Heirloom Slicer Tomatoes, Roma Tomatoes, Okra Mix, Bell Pepper Mix, Red Onion, Yellow Potatoes
Dice potatoes and simmer in a little water or vegetable broth until almost tender.
Add sliced okra, peppers, and onion.
Stir in chopped tomatoes and simmer for 10–15 minutes.
Season with salt, pepper, garlic, and your favorite herbs.
Serve with crusty bread or over rice.
