1. Purple Broccoli & Garlic Sauté with Swiss Chard
Ingredients: Broccoli (Purple Magic), Swiss Chard (Bright Lights), Garlic (Music), Leeks (Biker)
Slice leeks and sauté in olive oil until soft.
Add minced garlic and cook 30 seconds.
Add broccoli florets and cook until crisp-tender.
Stir in chopped Swiss chard and cook until just wilted.
Season with salt, pepper, and lemon.
2. Savoy Cabbage & Sweet Potato Skillet
Ingredients: Sweet Potatoes (Covington), Savoy Cabbage (Famosa), Leeks (Biker), Garlic (Music)
Dice sweet potatoes and sauté until lightly browned.
Add sliced leeks and minced garlic; cook until fragrant.
Toss in thinly sliced savoy cabbage and cook until softened.
Finish with a splash of apple cider vinegar or soy sauce.
3. Spinach & Leek Soup with Garlic
Ingredients: Spinach (Rangitoto), Leeks (Biker), Garlic (Music), Sweet Potato (Covington)
Slice leeks and sauté in olive oil.
Add diced sweet potato and minced garlic; cook 1 minute.
Pour in broth (veg or chicken), simmer until potatoes soften.
Add spinach and cook until wilted.
Blend smooth or leave chunky.
4. Roasted Broccoli & Sweet Potato with Garlic Butter
Ingredients: Broccoli (Purple Magic), Sweet Potato (Covington), Garlic (Music)
Cut sweet potatoes and broccoli into bite-size pieces.
Toss with olive oil, salt, and pepper.
Roast at 400°F until caramelized.
Melt butter with minced garlic and drizzle over before serving.
5. Swiss Chard & Savoy Cabbage Stir-Fry
Ingredients: Swiss Chard (Bright Lights), Savoy Cabbage (Famosa), Leeks (Biker), Garlic (Music)
Slice cabbage, chard stems, and chard leaves separately.
Sauté leeks and garlic first.
Add chard stems and cabbage, cook until tender.
Add chard leaves at the end so they don’t overcook.
Season with tamari, sesame oil, or lemon.
