CSA Recipes - June 17, 2026

1. Lime Basil Cucumber Salad

Ingredients: Summer Crisp Lettuce (Purple Fusion), English Cucumbers (Margarita), Basil (Lime), Dill (Teddy)

  • Tear lettuce into bite-size pieces.

  • Slice cucumbers into thin rounds.

  • Chop lime basil and dill.

  • Toss with olive oil, fresh lime juice, salt, and pepper.

  • Serve chilled for a refreshing summer salad.


2. Summer Squash & Pepper Skillet

Ingredients: Summer Squash (Butterfingers/Zephyr), Pepper Mix, Swiss Chard (Bright Lights), Basil (Lime)

  • Slice squash and peppers into strips.

  • Sauté in olive oil until tender-crisp.

  • Add chopped Swiss chard and cook until wilted.

  • Finish with chopped lime basil and a squeeze of citrus.


3. Cucumber & Pepper Lettuce Cups

Ingredients: Summer Crisp Lettuce (Purple Fusion), English Cucumbers (Margarita), Pepper Mix, Dill (Teddy)

  • Separate large lettuce leaves.

  • Dice cucumbers and peppers into small pieces.

  • Mix with chopped dill, olive oil, lemon juice, salt, and pepper.

  • Spoon into lettuce leaves and serve as fresh handheld bites.

4. Swiss Chard & Summer Squash Ribbon Salad

Ingredients: Swiss Chard (Bright Lights), Summer Squash (Butterfingers/Zephyr), English Cucumbers (Margarita), Dill (Teddy)

  • Thinly slice chard leaves and stems.

  • Use a peeler to make squash ribbons.

  • Slice cucumbers thinly.

  • Toss with dill and a simple vinaigrette of olive oil and apple cider vinegar.


5. Garden Greens & Pepper Sauté with Lime Basil

Ingredients: Swiss Chard (Bright Lights), Summer Crisp Lettuce (Purple Fusion), Pepper Mix, Basil (Lime)

  • Sauté sliced peppers in olive oil until softened.

  • Add chopped Swiss chard and cook until tender.

  • Stir in torn lettuce during the last minute for a light wilt.

  • Finish with fresh chopped lime basil and a pinch of sea salt.
