CSA Recipes - December 17, 2025

1. Kale & Radish Crunch Salad

Ingredients: Kale Salad Mix (Kalebration), Radishes (Easter Egg II), Carrots (Bolero), Green Onions (Deep Purple)

  • Chop kale salad mix finely.

  • Thinly slice radishes and green onions; shred carrots.

  • Toss with olive oil, lemon juice, salt, and pepper.

  • Massage the kale briefly to soften before serving.


2. Garlicky Leek, Swiss Chard & Dino Kale Sauté

Ingredients: Swiss Chard (Bright Lights), Dino Kale (Mamba), Leeks (Biker), Garlic (optional)

  • Slice leeks and sauté in olive oil until soft.

  • Add chopped chard stems and kale; cook until tender.

  • Toss in chard leaves at the end and season with salt, pepper, and a splash of vinegar.


3. Warm Carrot & Kale Skillet with Green Onions

Ingredients: Carrots (Bolero), Dino Kale (Mamba), Green Onions (Deep Purple)

  • Slice carrots thin and sauté until lightly caramelized.

  • Add chopped kale and cook until wilted.

  • Finish with sliced green onions and a drizzle of sesame or olive oil.

4. Swiss Chard Wraps with Crunchy Veg Filling

Ingredients: Swiss Chard (Bright Lights), Kale Salad Mix, Radishes, Carrots, Green Onions

  • Blanch chard leaves briefly to soften; pat dry.

  • Mix shredded kale, radishes, carrots, and green onions with lemon and olive oil.

  • Spoon filling into chard leaves and roll into wraps.


5. Leek & Greens Skillet with Radish Topping

Ingredients: Leeks (Biker), Kale Salad Mix, Dino Kale, Radishes

  • Sauté leeks until tender and lightly golden.

  • Add chopped kale and cook until just wilted.

  • Remove from heat and top with thinly sliced radishes for crunch.

  • Season with salt, pepper, and lemon.
