1. Tomato & Basil Salad with Lettuce Base
Ingredients: Tomatoes (Mix), Lettuce (Dragoon), Green Basil, Yellow Onion (Expression)
Slice tomatoes and onions thinly.
Arrange over a bed of chopped Dragoon lettuce.
Tear fresh basil and sprinkle on top.
Drizzle with olive oil, balsamic vinegar, salt, and pepper.
2. Roasted Eggplant & Pepper Medley
Ingredients: Eggplant, Peppers (Mix), Yellow Onion (Expression), Green Basil
Cube eggplant, slice peppers and onions.
Toss with olive oil, garlic, salt, and pepper.
Roast at 400°F for 25 minutes until caramelized.
Finish with chopped fresh basil before serving.
3. Carrot & Lettuce Wraps with Tomato Salsa
Ingredients: Carrots, Lettuce (Dragoon), Tomatoes (Mix), Peppers (Mix), Green Basil
Use Dragoon lettuce leaves as wraps.
Julienne carrots and thinly slice peppers.
Dice tomatoes and mix with chopped basil for a quick salsa.
Layer veggies inside lettuce leaves, top with salsa, and roll up.
4. Eggplant & Tomato Skillet
Ingredients: Eggplant, Tomatoes (Mix), Yellow Onion (Expression), Green Basil
Sauté sliced onion in olive oil until soft.
Add diced eggplant and cook until golden.
Stir in chopped tomatoes, simmer until saucy.
Add fresh basil at the end.
Serve with bread, rice, or pasta.
5. Carrot & Pepper Slaw
Ingredients: Carrots, Peppers (Mix), Yellow Onion (Expression), Lettuce (Dragoon), Green Basil
Shred carrots and slice peppers into thin strips.
Add a little finely diced onion.
Toss with shredded lettuce.
Dress with olive oil, lemon juice, salt, pepper, and finely chopped basil.
