CSA Recipes - October 22, 2025

1. Roasted Sweet Potato & Pepper Salad

Ingredients: Sweet Potatoes (Purple Majesty), Pepper Mix, Lettuce (Salanova Oakleaf), Parsley

  • Cube sweet potatoes and slice peppers.

  • Toss with olive oil, salt, and pepper, then roast at 400°F for 25–30 minutes.

  • Layer over chopped lettuce and sprinkle with parsley.

  • Drizzle with a lemon-garlic vinaigrette.


2. Napa Cabbage & Carrot Slaw with Cherry Tomatoes

Ingredients: Napa Cabbage (Haku), Carrots (Rainbow), Cherry Tomato (Edox), Parsley

  • Thinly slice napa cabbage and shred carrots.

  • Halve cherry tomatoes.

  • Toss with a dressing of olive oil, apple cider vinegar, honey, and salt.

  • Garnish with chopped parsley.


3. Purple Sweet Potato Mash with Sautéed Peppers

Ingredients: Sweet Potatoes (Purple Majesty), Pepper Mix, Garlic (optional), Parsley

  • Boil sweet potatoes until tender; mash with butter or olive oil.

  • In a skillet, sauté peppers with garlic until soft.

  • Spoon sautéed peppers over mashed sweet potatoes and top with chopped parsley.

4. Napa & Lettuce Wraps with Tomato-Carrot Filling

Ingredients: Napa Cabbage (Haku), Lettuce (Salanova Oakleaf), Cherry Tomato (Edox), Carrots (Rainbow), Parsley

  • Dice cherry tomatoes and shred carrots.

  • Mix with olive oil, lemon juice, salt, and parsley.

  • Spoon mixture into napa or lettuce leaves and roll up for crisp veggie wraps.


5. Cherry Tomato & Pepper Stir-Fry over Sweet Potato Coins

Ingredients: Cherry Tomato (Edox), Pepper Mix, Sweet Potatoes (Purple Majesty), Parsley

  • Slice sweet potatoes into ½-inch coins and roast until tender.

  • In a skillet, stir-fry tomatoes and peppers until lightly blistered.

  • Serve the stir-fry over sweet potato rounds and top with fresh parsley.
