CSA Recipes - October 8, 2025

1. Grilled Eggplant & Pepper Salad

Ingredients: Eggplant (Turkish Delight), Purple Bell Peppers (Lilo), Tomato Mix, Parsley

  • Slice eggplant and peppers, brush with olive oil, and grill until soft and slightly charred.

  • Dice tomatoes and mix everything in a bowl.

  • Add chopped parsley, olive oil, lemon juice, salt, and pepper.

  • Serve warm or at room temperature.


2. Crisp Lettuce & Daikon Salad

Ingredients: Summer Crisp Lettuce (Muir), Daikon Radish (KN-Bravo), Carrots (Rainbow), Parsley

  • Shred lettuce and slice daikon and carrots thinly.

  • Toss together with chopped parsley.

  • Dress with a mix of rice vinegar, olive oil, honey, and salt for a bright, refreshing crunch.


3. Pac Choi & Carrot Stir-Fry

Ingredients: Pac Choi (Little Shanghai), Carrots (Rainbow), Purple Bell Peppers (Lilo), Garlic (optional)

  • Slice pac choi, carrots, and peppers into strips.

  • Stir-fry quickly in olive or sesame oil with garlic.

  • Season with soy sauce and a dash of vinegar.

  • Serve warm as a light side dish.

4. Tomato & Eggplant Pasta Toss

IIngredients: Tomato Mix, Eggplant (Turkish Delight), Parsley, Garlic (optional)

  • Dice eggplant and sauté in olive oil until golden.

  • Add chopped tomatoes and cook until saucy.

  • Season with salt, pepper, and fresh parsley.

  • Toss with cooked pasta or serve over rice.


5. Rainbow Veggie Lettuce Wraps

Ingredients: Summer Crisp Lettuce (Muir), Carrots (Rainbow), Daikon Radish (KN-Bravo), Purple Bell Peppers (Lilo), Pac Choi (Little Shanghai), Parsley

  • Use large lettuce leaves as wraps.

  • Shred or thinly slice carrots, daikon, peppers, and pac choi.

  • Toss the filling with olive oil, lime juice, and chopped parsley.

  • Spoon into lettuce leaves and roll up for a fresh, crunchy wrap.
