CSA Recipes - September 24, 2025

1. Garlic Roasted Potatoes & Carrots

Ingredients: Potatoes (Elba), Carrots (Rainbow), Garlic (Music), Parsley

  • Cut potatoes and carrots into wedges.

  • Toss with olive oil, minced garlic, salt, and pepper.

  • Roast at 400°F for 30 minutes, until golden.

  • Sprinkle with fresh parsley before serving.


2. Fresh Garden Salad with Tomato & Pepper

Ingredients: Oakleaf Lettuce (Bauer), Tomatoes (Mix), Peppers (Mix), Parsley

  • Chop lettuce and place in a bowl.

  • Slice tomatoes and peppers.

  • Add chopped parsley.

  • Dress with olive oil, lemon juice, salt, and pepper.


3. Tomato-Pepper Parsley Salsa

Ingredients: Tomatoes (Mix), Peppers (Mix), Parsley, Garlic (Music)

  • Dice tomatoes and peppers finely.

  • Mince garlic and parsley.

  • Mix together with olive oil, salt, and a splash of vinegar.

  • Serve as a dip, topping for grilled meats, or inside wraps.

4. Garlic Mashed Potatoes with Parsley

Ingredients: Potatoes (Elba), Garlic (Music), Parsley

  • Boil potatoes until soft.

  • Mash with roasted or boiled garlic, olive oil or butter, salt, and pepper.

  • Stir in chopped parsley for freshness.


5. Rainbow Carrot & Tomato Lettuce Wraps

Ingredients: Oakleaf Lettuce (Bauer), Carrots (Rainbow), Tomatoes (Mix), Peppers (Mix), Parsley

  • Use lettuce leaves as wraps.

  • Shred carrots, slice tomatoes and peppers.

  • Toss with parsley and a drizzle of olive oil.

  • Spoon into lettuce leaves, wrap, and serve fresh.
